Prepared from the Topside of Veal this is a very low fat, delicate and tender Cut

However it really must be cut expertly from only the largest part of the muscle - and then sliced slightly across the grain in one piece - otherwise it will curl and buckle when fried

Correctly prepared - Veal Escalopes are easy and quick to cook
