INGREDIENTS: Duck

Cook thoroughly

Fry or griddle

Score fat and season with salt and pepper. Cook slowly fat side down and not too fierce heat until browned on both sides about 10 minutes each side.

Roast

Place in a hot oven 200˚c/400˚f gas mark 6 for 20 to 30 minutes
