Beef T-Bone Florentine Steak A Culinary Mind Blower

How does one explain that the simplest Cut and recipe - can be a culinary mind blower?

But that is exactly what a T-Bone Florentine Steak is legendary for

Outside of Florence the Florentine T-Bone Steak is frequently referred to as Fiorentina or Florentina

Two of the most prized Cuts

Owing to their large size and the fact that they contain Meat from two of the most prized Cuts of Beef (the Short Loin and the Tenderloin), T-bone Steaks are generally considered one of the highest quality Steaks.

Designed to be shared

A Florentine T-Bone Steak is a normal T-Bone Steak sliced thick, into an enormous double portion weighing at least 800g - traditionally served rare - and designed to be shared - usually with a bottle of red Tuscan wine!

A quick Cut to cook - but also one to savour - slowly!

One of the jewels of the Steak world

Expert husbandry, impeccable provenance, careful preparation and quick cooking are all important to making this simply prepared Cut one of the jewels of the Steak world

The Origin

The Italian word for Steak is ‘bistecca” and derives from the English Beef Steak.

The Legend

It seems that on one occasion a group of English merchants were in Florence and eagerly joined a banquet and started asking for “Beef Steak! Beef Steak!”… hence Bistecca!

That would be the legendary version, but it is more probable that eating a
T-Bone Steak was a habit introduced by the English travellers and residents in Tuscany, just like the “Roast Beef”

One of the world’s great sharing treats
