INGREDIENTS: Free Range Lamb

Cook thoroughly
Free Range Barnsley Chops 🚩
Remember to pat dry and let the meat reach room temperature before cooking
Roasting
Lightly season and then sear the Chops in a smoking hot pan for 2-3 minutes each side until brown.
Once seared - place in a deep-sided roasting tray.
Transfer into a pre-heated fan- assisted oven - fat side up - for 35-40 minutes at 200°c 400°f Gas Mark 6.
Aim for a core temperature of 58°c - using a Digital Meat Thermometer probe Once roasted cover loosely and rest for 10 -15 mins.
Cut the meat across the grain as this will provide more tender Cuts of meat.
Grilling/ Pan Frying/BBQ
Before cooking ensure the Chops are patted dry and at room temperature.
Preheat your pan or grill to almost smoking hot.
Season both sides well and place in the frying pan or under the grill.
Sear for 2-3 mins until brown and turn and repeat.
Keep turning to avoid burning until the preferred temperature is reached.
Then cover and rest on a warm plate for 10 mins
