Prepared from only truly Free Range, slow maturing, additive-free - naturally raised animals - with impeccable husbandry - on lush green pastures - and then Dry Aged to perfection Truly Free Range, immaculately raised, additive-free - and expertly Dry Aged to perfection ​​​​​

Extra flavour and succulence

Cut from the Fore Rib and left on the bone for maximum flavour 

Cooking on the bone then gives the meat that extra flavour and succulence to give this roast such a special place in our culinary history.

Cooks to perfection

The Ribs protect the joint from the oven's high heat - and also serve as a heavy base for the meat that prevents shrinkage. 

In a hot oven and cooked from room temperature, the outside will char perfectly - with just the right layer of golden fat - whilst the inside will cooks to perfection - with a little rare meat - for those who prefer it that way

The whole joint will burst with deep savoury flavour from the internal fat. 

Totally unrivalled 

Best roasted - or cut into thick slices (Steaks) for pan-frying, griddling or grilling

Free Range Carvery Rib of Beef

Roasting beef

First 25% of the cooking time should be at 240°c /475°f Gas Mark 9 then reduced to 190°c /375°f / Gas mark 5 for the rest of the cooking time.

Fillets or thin pieces of meat reduce by a few min per kg and bone in increase by few min per kg

Rare 15 minutes per 500g Internal Temperature 50°c 12 minutes per lb.
Medium 20 minutes per 500g Internal temperature 55°c 18 minutes per lb.
Well done 25 minutes per 500g Internal Temperature 60°c 24 minutes per lb.

Rest Beef for 30 minutes after roasting

Preparation/Cooking time 3 Hours 30 mins
Homemade Pasta, rich Ragù and cheesy Béchamel. Sweat Vegetables, Garlic, Herbs, leftover cooked meats, Stock or Wine and simmer - heavenly!
