Tender part of the Shoulder

Also known as Blade Steak this is taken from the most tender part of the Shoulder and is usually a rectangular Cut about an inch thick.

Cutting Chuck Steak

There are many ways of cutting Chuck Steak, which can result in cooking the meat unevenly.

We cut our Chuck Steak from only best part of the Shoulder into an even thickness - so you can enjoy an evenly slow cooked richly flavoured meal.

Perfect balance of meat and fat

Chuck Steak is also popular for use as Ground Beef and in Pies due to its richness of flavour and perfect balance of meat and fat.

Ideal for slow-cooked casseroles and stews.

INGREDIENTS: Free Range Beef

ALLERGEN ADVICE: For Allergens, including Cereals containing Gluten, see Ingredients in Bold.
Cook thoroughly

Free Range Chuck Steak

Stew (on top of the hob)

Brown meat in a pan, add root vegetables (celeriac, onions, carrots, etc.) Add stock, wine, herbs, bay leaves and cover. Cook slowly on the hob, on a low heat until tender. Just before serving thicken with flour or corn flour.

Braising (in the oven)

Brown meat in a pan, add root vegetables (celeriac, onions, carrots, etc.) Add stock, wine, herbs, bay leaves and cover. Place in the oven .Cook slowly on a low heat until tender

Pot Roasting

Place browned meat in oven dish with lid on. Pre-heat the oven to gas mark 1, 275°F (140°C) and cook for about 3 hours.

Free Range Chuck Steak

Prep/Cooking: 50 minutes, plus cooking of Beetroot and Grouse in water bath
Homemade Pasta, rich Ragù and cheesy Béchamel. Sweat Vegetables, Garlic, Herbs, leftover cooked meats, Stock or Wine and simmer - heavenly!
