Impeccable husbandry

Prepared from only truly Free Range, slow maturing, additive-free - naturally raised animals - with impeccable husbandry - on lush green pastures - and then Dry Aged to perfection

Breast of Lamb is taken from the Belly of the Lamb and is a ridiculously economical cut.

A joy to eat

Breast of Lamb is often perceived to be a fatty cut with very little lean meat, but with precise trimming our Lamb Breast Roulades Breasts can be easily be used into any Roast Lamb recipe.

By taking a normal Breast of Lamb - first deboning it - and then expertly trimming the majority of the fat and sinew - we have a Cut of meat that really is a joy to eat

Finally we roll and fold the trimmed meat and string tie it off - for perfect cooking and presentation - hence the name Lamb Breast Roulade

Pure juicy Lamb eating pleasure

None of the excess fatty liquid - none of the chewy bits - no need to stuff with breadcrumbs to soak up the internal fat - just pure juicy Lamb eating pleasure

A Thrifty Cut at a ridiculously low price

A Thrifty Cut at a ridiculously low price - a Mini Lamb Roast when there is just the two of you  - or for the larger gathering - just buy two - or more - for a full Lamb Roast that will remain in the memory for a very long time!

You really need to try

From each Lamb we only get two Breasts to prepare these beauties - so supply will be tight - but you really need to try one to understand just how great value this Cut really is!

Perfect for low and slow roasting.

Cook thoroughly

Free Range Lamb Breast Roulade 🚩

Always best to bring the meat to room temperature before cooking

  • Pre heat the oven
  • Now season the meat with Salt, Pepper, and Herbs
  • Always place fat side up in the oven or down on a Barbecue to crisp the fat
  • After the Lamb has been cooking for about the right time, or is looking cooked, check the internal temperature with a meat thermometer and for a pot roast over 70°c
  • For this piece of meat we recommend Roasting or Pot Roasting

Roasting

Preheat oven at 230°c 450°F gas mark 8 for the first 10 mins Reduce to 170°c 325°F gas mark 3 for approx 2 hrs
Always rest meat after cooking for 20 mins

Stewing and Pot Roasting

Brown meat in a pan, add root vegetables (Celery, Onions, Carrots, etc.)
Then add Stock, Red Wine, Herbs, Bay Leaves and cover.
Cook slowly on the hob on a low heat until tender
Just before serving thicken with Flour or Corn Flour.
Stews are always better next day reheated.
