Shin of Beef contains some gristle  and connective tissue - and when cooked long and slow - the gristle will turn into jelly - which gives it the wonderful rich Beefy flavour. If you buy Shin of Beef with the bone in - you can cook it 'osso buco' style.

Shin of Beef needs very slow cooking - but in exchange delivers a superb flavour - and creates stunning gravy thickening and delicious flavouring for sauces and gravies.

INGREDIENTS: Free Range Beef

Cook thoroughly

Free Range Leg (Shin) of Beef

To guarantee success, this cut needs long, slow cooking

Stew(on top of the hob)

Brown meat in a pan, add root vegetables (celeriac, onions, carrots, etc.) Add stock, wine, herbs, bay leaves and cover. Cook slowly on the hob, on a low heat until tender. Just before serving thicken with flour or corn flour.

Braising (in the oven)

Brown meat in a pan, add root vegetables (celeriac, onions, carrots, etc.)
Add stock, wine, herbs, bay leaves and cover. Place in the oven .Cook slowly on a low heat until tender

Pot Roasting

Place browned meat in oven dish with lid on. Pre-heat the oven to gas mark 1, 275°F (140°C) and cook for about 3 hours.
