Our Free-Range Otter Valley Chickens are processed on site in an FSA Licensed and Certified Organic slaughter house and cutting plant - so reducing stress and saving to the birds whilst removing unneeded transportation and multiple handling that in turn reduces stress to the birds - which much improves their final flavour

Roasting
All Poultry must be cooked to internal temperature of no less than 70°c at the coldest point i.e. the thickest part of the joint. At 70°c the meat will still be moist and succulent - but can be cooked longer if you like your Poultry a little more done - but not over a 100°c
Casseroling and Stewing
Whole Chickens can be roasted in the oven or pot roasted in a casserole dish with a lid on - but you can also ask us to cut it up for you in the delivery notes for stews, curries, and casseroles
Preheat the oven to 190°c / 375°f Gas Mark 5.
Rough Roasting Times
1.5kg - 190°c 1 hour 30 minutes
2.0kg - 190°c 2 hours
2.5kg - 190°c 2 hours 20 minutes
3.0kg - 190°c 2 hours 40 minutes
Always rest for 15 to 20 minutes
