And when low and slow properly cooked - is capable of melting into indecently tender silken strands with the collagen in the meat oozing out delivering an incredibly rich sauce  .

Free Range Pork that tastes like what Pork is meant to taste like!

Only Premium Quality, slow maturing Pork

We use only Premium Quality, Free Range, additive-free, slow-maturing Pork which provides the most succulent of rich porky flavours and textures - from farms with impeccable provenance and world class standards of ethical husbandry

Absolutely, totally Free Range Pork

Our Pigs are born outside - and spend almost all their entire lives outdoors in the fresh air, with freedom to roam in large paddocks, rooting around in the sandy soil and playing with their peers.

Distinctly porky flavour and succulence

By growing at a much slower, more natural rate, our Premium Quality Free Range Pork acquires a traditional, distinctly porky flavour and succulence - that has been largely forgotten amongst today's mass produced Pork

Growing appetite for Thrifty Cuts

Chiming perfectly with our growing appetite for the more Thrifty Cuts, Pigs Cheeks are set perhaps to rank alongside the now restaurant favourites of Lamb Shanks and Pork Belly - also once unloved - but now a must have on the smartest menus.

This meat is some of the most succulent on the entire Pig.

Our Free Range Pigs Cheeks have been expertly cut from the jowl, and trimmed of all surface fat so that you are buying only lean Cheek meat - this meat is some of the most succulent on the entire Pig.

Truly heavenly

While straight off the Pig - Cheek meat is not the most tender or lean cut - but when low and slow braised or stewed - all their connective tissue and integrated fat begins to melt into the sauce - and the result is truly heavenly.

Impossibly delicious

Slow braised you get impossibly delicious rich distinctive Pork flavours, together with a meltingly tender yielding texture that hardly needs the use of a knife.

Cooks more quickly

As a Pig’s Cheek is fairly small you will need two per person - or about 250g per person - but the size is also an advantage as it means it cooks more quickly than larger Cuts

Brawn or Pork Confit

Alternatively Pigs Cheeks can provide the most tender and delicious meat ingredient for making Brawn or Pork Confit.

Braising

Warm a thin film of oil in a heavy roasting tin over a moderate heat. Season the Cheeks with salt and pepper and brown them lightly in the oil. Remove and set aside.
Cut carrots into thick slices, peel and roughly chop onions, cut celery into short lengths and peel and slice the garlic.
Add the carrots, onions, celery, orange peel and garlic to the pan in which you browned the Cheeks, letting them soften and colour very lightly.
Set the oven at 160°C/Gas Mark 3.
Return the Cheeks to the pan, with the vegetables, scatter over the flour, season with salt and black pepper, cook for a minute or two then add the thyme, the bay leaves and the wine.
Bring to the boil, cover loosely with foil or baking parchment, then bake for 2½ to 3 hours until tender. Check occasionally to make sure the liquid isn't reducing too far. After an hour or so, it might be prudent to taste and add up to two tbsp of sugar, or some apple or other fruit jelly to the gravy.
Serve with a Potato Mash
