Taken from the Hindquarter this is a large, lean, boneless Cut of meat with very little marbling of fat and a wide-grained texture. It gets its name from the shiny silvery membrane covering its internal surface.
Silverside is excellent for very slow braising, pot roasting,oven roasting or boiling for Casseroles and Stews.

Roasting beef
First 25% of the cooking time should be at 240˚c /475˚f Gas Mark 9 then reduced to 160˚c /325˚f / Gas mark 3 for the rest of the cooking time. Fillets or thin pieces of meat reduce by a few min per kg.
Rare | 13-15 minutes per 500g | Internal Temperature 45°c | 14 minutes per lb. |
Medium | 20-22 minutes per 500g | Internal temperature 55°c | 18-20 minutes per lb. |
Well done | 25-28 minutes per 500g | Internal Temperature 60°c | 22-25 minutes per lb. |
Pot Roasting
Place browned meat in oven dish with lid on. Pre-heat the oven to gas mark 1, 275°F (140°C) and cook for about 3 hours.
