Prepared from only truly Free Range, slow maturing, additive-free - naturally raised animals - with impeccable husbandry - on lush green pastures - and then Dry Aged to perfection

A little more tender

Also known as Top Rump  - and cut from the inner muscle of the Thigh. This muscle is quite tender and very lean so it makes an excellent roasting joint.

 It is a little more tender than Silverside.

Classic Roast Beef flavour

Slowly roasted or braised - this Cut produces a classic Roast Beef flavour.

Cooked in this way Topside can be served pink - and is exceptional served cold.

Roasting beef

First 25% of the cooking time should be at 240°c /475°f Gas Mark 9 then reduced to 160°c /325°f / Gas mark 3 for the rest of the cooking time. Fillets or thin pieces of meat reduce by a few min per kg.

Rare 13-15 minutes per 500g Internal Temperature 45°c 14 minutes per lb.
Medium 20-22 minutes per 500g Internal temperature 55°c 18-20 minutes per lb.
Well done 25-28 minutes per 500g Internal Temperature 60°c 22-25 minutes per lb.

Rest Beef for 30 minutes after roasting
