The Turkey Crowned is the whole Turkey Crown - but with the Boned-out Legs included separately - so you can cook the Boneless Legs with the Crown - or freeze and save them for a delicious meal on another day

We leave the Wings on and some bone in, both for extra flavour and also this helps keep the Turkey’s shape for presentation at the celebratory table

Run wild

Our Crowns are from our Free Range slow-maturing Turkeys hatched at the beginning of summer and encouraged to run wild in large countryside fields until Christmas.

Natural diet

These exceptional Turkeys forage on a natural diet of grain and are then hung in the feather, like Game, to mature the flavour.

They are then game-hung, dry-plucked and dressed by hand.

Perfection 

Perfection comes in time and cannot be hurried. 

When ordering allow 1/3 kg per person

As these are naturally reared birds you will get some weight variations.

Once you have chosen your weight category bear in mind there may be a possible weight variation in either direction of 10% - from the high or low point of the Weight category.

Free Range Turkey Crowned - Legs Included

Roasting

Weigh your turkey crown after stuffing.

Cover the breast with strips of bacon or smear with softened butter then cover loosely with foil.

Preheat your oven to 190°C (180°C for fan assisted ovens), 375°F, Gas Mark 5.

Less than 4kg weight? Cook for 20 minutes per kg then add another 70 minutes cooking time at the end.

More than 4kg weight? Cook for 20 minutes per kg and add 90 minutes cooking time at the end.

Remove the foil for the last 40 minutes to brown the top.

Ovens vary, so always test your turkey to make sure it is thoroughly cooked. Pierce the thickest part – this is usually the leg of a whole turkey - with a skewer or sharp pointed knife. Hold a spoon underneath to catch the juices as they run out. If they are clear the turkey is cooked. If they are pink it needs further cooking. Or use a meat thermometer and an internal meat temperature of 75˚c.

After Roasting allow the Turkey to stand for 15-20 minutes in a warm place – it won’t go cold and will be easier to carve.
