How to Cook Pork Loin Mini Roast

There are two ways to roast this joint:

One with the crackling attached in a very hot oven 220c gas mark 7 for 45 mins.

Or - remove the crackling and roast for 1 hour on a 160c gas mark 3 with the crackling lying next to it with salt rubbed into it and if the crackling is not crispy you can blast it on full heat for the last 5 mins while the joint is resting. Always rest meat after cooking for 10 -15 minutes.
