How to Cook Spatchcock Chicken Halves
Grilling
Grill on both sides for 10 minutes checking throughout for burning. As all grills are different eitherwait until a skewer inserted into each part comes out piping hot or the internal temperature using ameat thermometer in the thickest part of the chicken reaches 70ºC 165-170 ºF.

Roasting
Heat the oven to 200ºC, fan 180ºC, 400ºF, gas 6. Cook in the oven for 45 minutes, until a skewer inserted into each part comes out piping hot or the internal temperature using a meat thermometer in the thickest part of the chicken reaches 70ºC 165-170º F.

Barbecue
Build a medium fire in your charcoal grill (may use gas grill, but charcoal is recommended for this recipe). Brush the grates lightly with oil, and place the chicken skin side down on the grill. Cook for just 3-4 minutes to lightly char the skin and create some grill marks, then turn over so the skin side is up. Brush the top of the chicken generously with barbecue sauce. Cover the grill and cook, without turning the chicken again, for 35-40 minutes, or until the internal temp is 70ºC 165-170ºF.
