How to Cook Venison Mini Roast
Preheat oven to 230°c, 450°f, gas mark 8 and cook for 10 minutes, then reduce to 180°c, 350°f  gas mark 4 for 30 minutes
Rare 20 minutes per 500g 50°c internal temperature

Medium 30 minutes per 500g 55°c internal temperature

Well Done  35 minutes per 500g 60°c internal temperature

Always rest meat after cooking for 10 - 15 minutes
