Our Lamb Florentine Loin Chops - or Double Rib Loin Chops as they are sometimes known - are two Lamb French trimmed Ribs per Chop - cut from the Loin and left on the bone for maximum flavour

Double the normal size of Lamb Chops - Florentine Lamb Chops yield a sumptuous, mouth watering, tasting experience that allows the perfect balance of slight charring on the outside whilst retaining that luscious pink meat on the inside

Concentrate and intensify flavours

On a Godfreys Lamb Florentine Chop - the eye of the Loin is left on both Ribs and some of the backbone and so the eye of meat is not left open to the atmosphere - which allows the tastes to concentrate and intensify - as the Chops retain more of their juices and flavours whilst Dry Ageing and cooking.

Fully flavoured with sweet meat and just the right amount of creamy fat These Chops typically run about 2 inches. The benefit of using thicker Lamb Chops like these is that they can be more easily cooked to rare or medium rare - while still having a well seared exterior - than thinner Chops. 

Packed full of flavour

Since double-rib Chops will have a wide, thin layer of top fat, after browning them on both sides, stand the Chops on this fatty side to brown and crisp.

A bit more time

You can cook Florentine Lamb Chops much like a normal Lamb Chop - just allow a little more time because of the size - and also allow a bit more time to enjoy this exceptional eating experience - all the way down to the last morsel on those tasty bones.

Lamb Florentine Chops  🚩

INGREDIENTS: Free Range Lamb

Cook thoroughly

Lamb Florentine Chops  🚩

Cooking methods that work well for double-thick Lamb chops include grilling and pan searing - then roasting.

Pan-seared and Roasted

  • Preheat your oven to 450 degrees Fahrenheit.
  • Remove the Florentine Lamb Chops from the refrigerator, brush with Olive oil and season with Salt and Pepper to taste.
  • Allow the Chops to rest at room temperature for 20 to 30 minutes before cooking.
  • Place an oven-safe frying pan on your cooktop and coat with a small amount of high heat cooking oil.
  • Heat the pan over high heat until the oil just begins to smoke.
  • Carefully add the Florentine Lamb Chops to the hot oil and sear on one side until well browned - about 2 minutes.
  • Flip the Chops and sear the other side until well browned - this side will take about 1 minute to fully brown.
  • Transfer the entire pan, with the Florentine Lamb Chops inside, into the preheated oven.
  • Roast the Lamb Chops to until they reach your desired level of doneness - 125°F for Rare, 130°F for Medium Rare, 140°F for Medium, or 155°F for Medium Well Done - when measured with your meat thermometer.

Cooking times will vary depending on your desired level of doneness, but Medium Rare double-thick Florentine Lamb Chops should take about 5 to 6 minutes to finish in the oven.

Remove the Chops from the oven onto plates or a platter and rest for 3 to 5 minutes before serving.

Grilled

  • Drizzle the Florentine Lamb Chops with Olive oil and season to taste with Salt and Pepper.
  • Allow the chops to rest at room temperature for 20 to 30 minutes before cooking.
  • Setup and preheat your grill for high-heat direct grilling.
  • Scrape the grill grate clean using a wire grill brush. Grill the Chops, flipping frequently, for 8 to 12 minutes until cooked to your desired level of doneness.

Remove the Chops from the grill onto plates or platter and allow them to rest for 3 to 5 minutes before serving.

Barbecue

  • Ensure the barbecue is very hot and allow the chops to come to room temperature before cooking.
  • Brush the Chops with Olive oil and season with Salt
  • Place the Chops onto the hottest part of the barbecue and cook for a few minutes on each side for Medium.
  • If you like your meat well done simply cook for a little longer since double-rib Chops will have a wide, thin layer of top fat, after browning them on both sides, Stand the chops on this fatty side to brown and crisp it.

Remove from the barbecue and leave to rest for around five minutes

Variations

Try marinating the Chops with Herbs and Garlic or Chilli before cooking, or rub spices such as Coriander, Cumin or Mustard into the Chops for extra flavour.

You could also try adding different types of Wood Chips to your barbecue to give the Lamb a deep, smoky flavour.

Rare 48-50°c rested 52-54°c
Medium Rare 52-54°c rested 56-58°c
Medium 56-58°c rested 60-62°c
Well Done 65-68°c rested 70-75°c

Then for roasts rest usually 15 to 20 mins after.
