Carved from the top portion of the Leg, this lean and muscular Cut of Beef is favoured by Pitmasters and barbecue aficionados who favour a low-and-slow approach to cooking.
The most flavourful fall-of- the Bone Beef options.
Due to its high collagen content, it is one of the most flavourful fall-of-the Bone Beef options. - but it does need patience and time to cook.
Don’t worry about the Collagen - as it breaks down beautifully leaving the Meat silkily tender and falling off the bone - for a taste that will linger in the memory for a very long time
No bigger than most pot roast Cuts
This is a very impressive looking Cut - but, if you analyse it, the Meat from a whole Shank portion of Beef is no bigger than most pot roast Cuts with one exception - the bone.
Expertly French Trimmed by our Master Butchers - there is easy access to the inner silky, sumptuous Bone Marrow - that adds that extra punch of deep Beefy flavour to the Meat

First, you let the rub soak into the Meat overnight. The next day, light the charcoal in your Big Green Egg and smoke the Meat for four hours. Then, cook it slowly for about six hours until the collagen in the meat’s connective tissues is transformed into gelatine. The result?
