Griddling

A griddle pan is very similar to a frying pan, but with very thick ridges. It’s great for achieving a charred flavour and appearance on food.

It has distinctively raised ridges which leave "grill marks" on anything you cook. 

As with outdoor barbecues, griddle pans are great for Burgers, Steaks, Chops and flatter pieces of quick cooking Cuts

The griddle ridges also keep cooked food separated from its grease, which reduces the overall fat content of the food. 

Additionally, most griddles include a recessed area that collects fat during the cooking process.

There are other definitions of gridling equipment such a flat top smooth plate and flat top ridged plate with no sides - but here we will just be referring to the griddle pan
