Roasting
Preheat oven to 230°c, 450°f, gas mark 8 and cook for 10 minutes, then reduce to 180°c, 350°f gas mark 4 for 30 minutes
Rare | 20 minutes per 500g | 50°c internal temperature |
Medium | 30 minutes per 500g | 55°c internal temperature |
Well Done | 35 minutes per 500g | 60°c internal temperature |
Always rest meat after cooking for 10 - 15 minutes
